Ingredients: Pasteurized milk, bacterial culture, salt, enzymes, annatto (for color, optional)

Color: Pale yellow to orange (depending on annatto use)
Aging Period:

  • Mild: 2–3 months

  • Medium: 4–6 months

  • Sharp: 6–9 months

  • Extra Sharp: 9+ months

Moisture Content: 35%–39%
Fat Content (Dry Basis): 48% minimum
pH: 5.1–5.4

Shelf Life: 6–12 months (refrigerated, unopened)
